Tailgating is serious business in the college town that I’m living in, and it’s not something I can avoid. There’s clearly no point trying to beat ’em, so this year, I’m going to join ’em, with a really nifty Fudgy Flourless Chocolate Cake In A Jar recipe that’s perfect for tailgating.
There’s not going to be any shortage of appetizers or savory, spicy finger foods at any tailgating party, but the few that I’ve been to almost never had any gourmet desserts! 🙂 Usually, desserts and sweet treats are my responsibility at any potluck party that I go to.
So enter, fudgy flourless chocolate cake in a jar! A rich, decadent, gluten-free, flourless chocolate cake, that’s sinfully fudgy in the middle and crackly on top, with a great balance of dense and light textures.
I love individual desserts that can be made in mason jars. Like these no bake coconut strawberry cheesecake jars, chocolate brownie trifle, chocolate hazelnut trifle, pumpkin pie chia pudding etc. This way, that the rich decadence is all yours and you don’t have to share it with anyone! 🙂
This flourless chocolate cake in a jar is perfect for any type of entertaining. You can easily make these and then store in the fridge until you need them. They are just as portable whether they are unbaked (should be chilled before you transport them), or baked. And just as delicious whether warm or chilled!
This fudgy, flourless chocolate cake is incredibly versatile, and IF by any chance, one portion of this fudgy in the center and crisp on the outside, delicious cake is too much for one serving for you (seriously, are you even real??), you can screw the top back on and save it for later.
If you can recall, I previously did a great wine pairing recipe with my creamy cheesy chicken pies, and loved it. This time, I wanted to try it with a chocolate dessert.
This fudgy, flourless chocolate cake is also super easy to make! You can mix everything in one bowl and store the batter in generously buttered 1/2 pint mason jars. The cooking time can range from 15-30 minutes, depending on whether you bake these from room temperature or chilled.
The best way to know if it’s done is to take it out of the oven when the cakes have risen and look crisp and crackly on top. The cake will sink a little as it cools down, but the center will still be deliciously fudgy. I even added some toasted pecans that really heightened the texture with their crunch, but that’s optional (although recommended!).

Ingredients:
- 1 stick of butter 1/2 cup
- 8 oz semi-sweet chocolate
- ⅓ cup white sugar
- 1 ⁄3 cup brown sugar
- ¼ tsp kosher salt
- 3 eggs
- 1 egg yolk
- 1 teaspoon baking powder
- 2 tbsp of malted drink powder dissolved in 3 tbsp water OR ¼ cup of strongly brewed coffee
- 3 tbsp ground almonds
- ⅓ cup chopped pecans toasted
- Whipped cream for serving
Instructions:
- Preheat oven to 350°F.
- Place butter and chocolate in a microwave-proof large bowl and heat in 1 minute intervals to melt it.
- Add the sugars, salt and whisk to combine.
- Add eggs, baking powder, malt drink (or coffee), almond flour, and pecans, and stir well to combine.
- Generously butter 5 half pint mason jars. Divide the batter into these jars. These can be baked immediately, or close the jars and place them in the fridge to chill (or in the freezer for up to a month).
- Bake in preheated oven for 15 minutes until they rise in the jar and there’s a crack in the center. Will take about 35 minutes for the chilled cakes (longer if frozen).
- Remove from the oven. These can be eaten slightly warm (with a more molten center) or chilled (a fudgy center). Serve with whipped cream and strawberries. Enjoy!
