  • 1 tbsp cracked pepper
  • ½ tbsp chili/red pepper flakes
  • 1 inch ginger sliced
  • 2 - 3 garlic cloves
  • 2 tsp fish sauce
  • ¼ tsp salt or more to taste if desired
  • 1 tbsp palm sugar or brown sugar
  • 3 tbsp olive oil

Chicken Kebabs

  • 1.5 lbs boneless chicken thighs cut into 1 inch pieces
  • 8 - 10 wooden skewers soaked in water overnight
  • Oil to brush on to make sure it doesn’t stick
  • Black pepper and chopped Thai basil to sprinkle on top
  • Romaine lettuce to serve

Spice Mix

  1. Place all the ingredients in a small food processor and pulse until you have a smooth paste. Set aside.

Chicken Kebabs

  1. Mix the chicken and spice mix together, and set aside for at least a few hours to marinate, preferably overnight. Also, place the wooden skewers in water, to soak overnight as well.
  2. The next day, skewer the chicken, dividing it up between 8 - 10 skewers.
  3. Prepare the grill to a medium high heat, and brush the grill with some oil.
  4. Place the chicken skewers on the grill, and cook them about 5 - 10 minutes per side until the chicken has nice grill marks. Cook the chicken kebabs on all sides.
  5. Sprinkle black pepper and chopped basil on top before serving. Serve with Romaine lettuce (optional).
