Instructions
Creamy Vanilla Ice Cream Popsicles
Dissolve the corn flour in the milk.
Place the sugar, yolks, vanilla and salt in a saucepan. Whisk well to combine (especially the yolks) and then add the milk and whisk again.
Heat the milk mix over medium heat, while whisking frequently until the mix thickens (it should be thick enough to coat the back of a spoon and leave a clear trail if you run your finger across it). Leave it to cool down completely (to room temp or chilled in the fridge).
Whisk the whipping cream in a cold bowl until you form stiff peaks. Add this whipped cream into the cooled custard and fold to combine.
Pour the mix into eight, 3 oz popsicle molds and let them freeze overnight.
Boozy Iced Coffee Float
Place a shot of coffee liqueur and a vanilla ice cream popsicle in a glass. Add a shot of espresso and top it with some soda.
Taste and add simple syrup IF desired (or add some chocolate syrup for a more decadent treat!). Enjoy!
