Mango and Grilled Shrimp Appetizers

Ingredients

Grilled Shrimps

  • ½ lb raw Shrimps cleaned and de-veined with tail on or off (about 40+ shrimps)
  • ½ tbsp Ketjap Manis
  • ¼ tsp cayenne pepper or halve it for a less spicy version
  • ½ tsp coriander powder
  • 2 garlic cloves minced
  • 1 tsp brown sugar
  • Generous pinch of salt
  • About 2 tbsp chopped cilantro

Mango and Grilled Shrimp Appetizers

  • Hummus spread of your choice
  • 1/2 mango peeled and 1 cheek sliced thin
  • TRISCUIT Crackers I used Original, but you can use cracked pepper or sriracha flavours as well

Instructions

Grilled Shrimps

  1. Combine all the ingredients, mix and let it marinate for a few minutes (upto 1 hour).
  2. Preheat grill to medium high. Or you can use a nonstick pan or a grill pan as well.
  3. Oil the cooking surface generously. When the grill is hot, place the shrimps on it. Cook the shrimps for about 30 seconds per side until cooked through and there’s good caramelization on them.
  4. Transfer cooked shrimps to a plate with slices of lemons to serve.

Mango and Grilled Shrimp Appetizers

  1. Apply a generous amount of hummus on a TRISCUIT cracker.
  2. Place a grilled shrimp on top, followed by a slice of mango.
  3. Sprinkle crushed chilli flakes and chopped cilantro on top (optional).
