These protein popsicles are a summer-favorite!

Protein popsicles

Frozen treats are a frozen necessity for me, come summer. I’ve shared a bunch on the blog, like these creamy vanilla popsicles, iced coffee popsicles, spicy pineapple popsicles, lychee cantaloupe popsicles, peach melba popsicles, mango coconut popsicles, and easy fruit sorbet among others!

I’m not one for hot weather, and I’ll go through several popsicles a day if I can. So I wanted to make popsicles that felt and tasted like a sweet summer treat, but were also healthy!

These Vanilla and Chocolate Protein Popsicles are the answer! They are gluten free, vegan, and have no added sugar. They don’t come with an extra layer of indulgence and guilt, but they taste like it anyway!

I made these protein popsicles with Bob’s Red Mill Nutritional Booster powders, which have an amazing 20g of protein per serving plus fiber, probiotics and prebiotics as well!

These nutritional boosters are sweetened with monk fruit (Luo Han Guo), which is a fruit that is known to sweeten food with minimal calorie impact, along with a host of other health benefits.

I also added some dates, since fruity sweetness gets dull when frozen. So dates are a great source of some extra sweetness and fiber content for these protein popsicles. The same as I did with this peanut butter berry smoothie bowl.

These vanilla and chocolate protein popsicles are a great healthy snack to have in the back of your freezer in the summer. They are packed with nutrition, will satisfy your sweet cravings, and they are a great post-work out snack as well.

And they make for deceptively good snacks for kids as well. Those vanilla and chocolate swirled layers taste as delicious as you could imagine, but they also come with a very generous helping of protein.

Substitutions for banana

If anyone you know isn’t a fan of bananas, no worries – you can substitute bananas with 2-3 tbsp of unsweetened almond butter or cashew butter or 1/3 cup of coconut yogurt.

Flavor variations

Bob’s Red Mill Nutritional Booster powders come in 3 different flavors. I use 2 here – vanilla and chocolate. But there’s a third – chai flavor!

You can add berries instead of bananas for fruity popsicles –  like vanilla and berry or chocolate and berry popsicles.

Or you can add turmeric to your chai protein popsicles for a twist on golden milk latte.

All you need is your

  • Favorite smoothie ingredients,
  • Bob’s Red Mill Nutritional Booster powders for a wonderful nutritious protein boost,
  • A blender and
  • Popsicle molds, to make your own protein popsicles!

These Vanilla and Chocolate Protein Popsicles sound almost too good to be true! Delicious vanilla and chocolate swirled layers, but without any added sugar. They are vegan, gluten-free, and loaded with protein. Perfect summer treat!
EASY – This recipe is very easy to make since there is no cooking involved either. It's a great way to turn protein shakes into delicious treats.
There is an overnight freezing step in this recipe.

US based cup, teaspoon, tablespoon measurements. Weight‌ ‌measurements‌ ‌are‌ ‌recommended‌ ‌for‌ ‌accurate‌ ‌results whenever available.

Makes: 10 popsicles

Ingredients:
 

Vanilla Layer
  • 1 cup unsweetened almond milk
  • ⅓ cup vanilla flavored protein powder I use 2 scoops of vanilla flavored Bob’s Red Mill Nutritional Booster powders
  • 1 banana or ⅓ cup coconut yogurt
  • 2 dates add more for more sweetness
  • Pinch sea salt
Chocolate Layer
  • 1 cup unsweetened almond milk
  • ⅓ cup chocolate flavored protein powder I use 2 scoops of chocolate flavored Bob’s Red Mill Nutritional Booster powders
  • 1 banana or ⅓ cup coconut yogurt
  • 2 dates add more if you want more sweetness
  • Pinch sea salt

Instructions:
 

Vanilla Layer
  • Place all the ingredients in a blender and blend until smooth. Pour into a jug and set aside.
    1 cup unsweetened almond milk, ⅓ cup vanilla flavored protein powder, 1 banana, 2 dates, Pinch sea salt
Chocolate Layer
  • Place all the ingredients in a blender and blend until smooth. Pour into a separate jug and set aside.
    1 cup unsweetened almond milk, ⅓ cup chocolate flavored protein powder, 1 banana, 2 dates, Pinch sea salt
Vanilla and Chocolate Popsicles
  • Prepare 10 x 3 fl oz (89mL) popsicle molds. Fill each mold half-way with the vanilla smoothie. Freeze this layer for about 30 min – 1 hour (just to partially freeze the layer. This will ensure that the chocolate layer won't sink and mix with the vanilla layer).
  • Pour the chocolate smoothie layer over the semi-frozen vanilla smoothie layer. Using a skewer or extra popsicle stick, gently swirl the two layers.
  • Insert the popsicle sticks, and freeze for at least 6 hours to completely freeze the popsicles.
  • Dip the popsicle molds in hot water for a few seconds (or under running hot water), to make it easier to unmold them. Place the un-molded popsicles in zipper bags and in the freezer for whenever you need a delicious and healthy snack!

    They turned out really icey so not very appetizing
    Any ideas on how to avoid that??

      Hi Carla
      The higher the fat content, the less icy / more creamy it will be.
      Extra bananas can make it less icy due to the less water content. Avocados will also work, but it may discolor.

    Perfect for my new Arizona summers. UGH! Thank goodness they have some protein to keep me going! Is there a way to store them so I can take them on my hike? Might need to sneak some dry ice into my travel cooler:)
