So everyone’s looking forward to Valentine’s day this weekend, and here I am counting down the days for Deadpool!
Is it just me?
Truth be told, I’m not a comic book geek. I never owned stacks of those comic books or impressive collections of their memorabilia. I didn’t even know comics were collectibles until I was older (the only ones available to me at the time were Archie comics). Having grown up in Sri Lanka for part of my childhood, I unfortunately didn’t have access to these comics or even the knowledge of it. I was a huge TMNT nerd though (official member of the TMNT fan club thankyouverymuch. I owned TMNT lunch boxes, water bottles, stationery, T-shirts, and bed spreads even!).
The only ones I knew of were the very mainstream ones which were on tv like Batman and Robin (thanks to countless reruns of Adam West’s show from the 60s, which I absolutely loved at the time, and still chuckle over every time I see it on one of those obscure tv channels on weekends), and Superman (I may or may not have had more than a little obsession for Christopher Reeves), Xmen and The Incredible Hulk (the one with Lou Ferrigno from the late 70s).
And I even desperately wanted a vintage superhero themed wedding, featuring a wedding cake with the Hulk (my husband’s favourite character) smashing one side of the cake! I wanted superhero PEZ dispensers as party favours for our guests, and even our photos to have a distinct superhero theme! 🙂 Sadly, I couldn’t do any of this, BUT, Mr K and I definitely plan on re-doing it again one day, with all of this plus more! 🙂 A blowout wedding party with all the superheroes, antiheroes and supervillains that we can cram into one gathering! How fun would that be?

I love all things Marvel and DC. I don’t discriminate, really don’t have a reason to. I mean I didn’t even know the difference until I met Mr K. But of all the superheroes and antiheroes out there, I think Deadpool might quite legitimately be my absolute favourite!

Everyone loves a superhero. Everyone wants to be one, wants to have that power, to save the world and savour that feeling. And I’m the same. But honestly, what I love and admire even more, are decent people who live their life doing what makes them happy, not giving a shit about the judgmental ones around them, living their life with their own characteristic flair. And THAT is DEADPOOL! 🙂 It also helps that he’s probably the funniest. An accelerated healing factor as a superpower isn’t half bad either.

Having read his comics recently, I love how he’s portrayed as the antihero that just doesn’t care, but also kind of does (if that makes sense?). I was so disappointed when Deadpool made an appearance in X-Men Origins: Wolverine and it just wasn’t the same guy from the comic books. Don’t get me wrong, I love me some Ryan Reynolds, but it just wasn’t the Deadpool that I wanted to see on the big screen. And then years later, I saw the “leaked footage” from the test screening for the new Deadpool movie and there was a faint glimmer of hope! With every tv spot and trailer, I got more excited knowing that they were going to do justice by the character from the comic books. And now it’s finally here baby! Just 3 more days. Can you guess what I’ll be doing this Friday? 🙂

And as a celebration, I’ve got Funfetti Deadpool Cake Pops for you guys today! 🙂 These deadpool cake pops are easy to make. I have gone geeky on this blog with cake pops before – check out these Homer Simpson cake pops from a while back. You can use ANY KIND of cake you like (homemade or store-bought) to make these. I’m using vanilla cake with Funfetti frosting, to celebrate the colourful badass that Deadpool truly is!
So grab some Chimichangas, and maybe sneak in some cake pops (I said maybe), and go watch Deadpool this weekend, if you’re a fan too! 🙂

Tips for Great Cake Pops – (Courtesy of Bakerella & my own experience)
No matter what the recipe says, you should always add frosting a little at a time, mixing it well until the cake crumbs start to bind together. If the cake pops are too stodgy, they’ll be too soft and too sweet, and if there’s too little frosting, the cake pops will crumble on the stick.
CRUSH the cake. It needs to be crushed. If you don’t crush it fully the cake won’t bind. However, cake pop “dough” is more forgiving with some extra frosting, and you can add mini chocolate chips and funfetti (like I have).
Keep the cake pops in the freezer till they become FIRM (not frozen), BEFORE sticking them on the popsicle stick. Personally, this is the method that works best for me.
Dip each stick in the melted chocolate and then insert the cake pop. Since the cake pop is cold, it should help the chocolate harden up and grip the popsicle stick firmly. Do this for all the cake pops first, allowing time for the cake pop to adhere properly to the popsicle stick. PLUS this allows the cake pop to get closer to room temperature again before dip it in the melted chocolate.
Use paramount crystals, cocoa butter or vegetable oil to thin out the melted chocolate if it’s too thick. Thick and lumpy chocolate is your enemy. You want it to be thick but dippable, so you get a nice smooth coating.
You don’t want to dip frozen, or very cold cake pops in the chocolate. Likewise, you don’t want to dip the cake pops in very hot melted chocolate. The cake pop and melted chocolate should be closer in temperature to prevent cracking as the chocolate hardens. (FYI – cracks happen as the cake pop warms and expands, OR as the warm chocolate shrinks as it cools down).
When you dip the cake pops IN the chocolate, fully submerge it in the chocolate. Don’t “twirl” the cake pop in the chocolate – just move it around slightly to get an even coating. IF the cake pop doesn’t fully submerge, use a spoon or other utensil to pour the chocolate over the cake pop.
DO NOT shake the cake pop to get rid of excess chocolate. Tap the wrist or hand that you are holding the cake pop with, which helps shake off excess chocolate gently.
So with those tips in mind – you should get perfect cake pops every time! And even if you get a couple wrong, no worries! Those are the extra ones… just for you! 😉

Ingredients:
Cake
- An 8 inch round cake from a boxed cake mix OR
- 7 oz/ 200g butter
- 7 oz / 200g sugar
- 3 eggs
- Pinch of salt
- 1 tsp vanilla extract
- 6 oz / 170g of self-rising flour
Frosting
- 5 oz softened butter
- 7 oz / 200g icing sugar confectioners sugar
- Pinch of salt
- 1 tsp vanilla extract
- ¾ - 1 cup funfetti 1 cup if you want it more colourful
Cake pops
- 1 - 2 pounds of red candy melts there'll be some leftover
- Cake pop sticks lollipop sticks
- Black and white fondant
- Corn flour to dust
- Vodka to clean optional
- Water to stick fondant onto cake pops
Instructions:
Cake
- Line an 8 inch cake pan with parchment paper. Preheat oven to 350°F / 180°C.
- Make the cake according to the box mix instructions. Pour enough cake batter to the prepared cake pan (if there’s any leftover batter, you could make cupcakes). Bake according to instructions and let it cool completely.
- If you're making the cake from scratch - Cream the butter, sugar and salt together until fluffy using a hand held beater or mixer.
- Add the eggs one at a time and mix in between. Mix in the vanilla as well.
- Sift the flour into a separate bowl. Add this flour to the butter-sugar mix and mix it in gently in 2 batches. Mix until the flour is fully incorporated.
- Pour this mix into the prepared baking pan (9 inch round), and bake in the preheated oven until a cake tester/skewer inserted into the middle of the cake comes out clean.
- Remove from the oven and let it cool completely.
Frosting (makes approximately 1 ½ cups)
- Cream the butter with salt and vanilla (you could use a whisk for this since it's a small amount of frosting, but alternatively you could use a hand held mixer as well). Add the sifted icing sugar, spoonfuls at a time and whisk it in. Once all the sugar has been added, whisk vigorously until light and fluffy. Set aside.
Cake pops
- Crumble the cooled cake into a large bowl. Add the funfetti to the cake crumbs. Add about 1 cup of the frosting and incorporate it well into the crumbled cake using a spoon or your hands. If this mix sticks together when squeezed in your palm, then you don’t need to add any more frosting. If the mix is still dry however, add more frosting and mix it in.
- Using a small scoop, portion out the cake pops and roll each one into a ball, or an egg shape. Do this gently without squeezing too hard. Place these on a lined baking tray. Then transfer them to the freezer for about 15 minutes, and then to the fridge until you prepare the chocolate melts.
- Prepare the chocolate melts as instructed in the package. If you're microwaving the melts, microwave in 15 sec bursts, while stirring each time, until most of it has melted. Using a spoon, stir to melt the remaining chocolate melts. If the chocolate is too thick, add some melted shortening or paramount crystals and stir until you have a good consistency.
- Let it rest for about 5 minutes until the melts have cooled down closer to room temperature.
- Remove the cake pops from the fridge. Dip the end of a cake pop stick in the melted chocolate and insert it in a cake pop (about halfway into the cake pop). Put it back on the baking tray and then repeat this with all the cake pops.
- Next, starting with the first cake pop, dip each one in the melted chocolate coating. If you can't dip the whole cake pop in the melted chocolate, use another stick or spoon to cover it well. (So a narrow glass or cup is more suitable, so that the cake pop can be fully submerged in the coating).
- Once you have dipped a cake pop in the coating, gently tap the hand you're holding the cake pop with, with your other hand to shake off excess coating. Stick this on a cake pop stand (or just a block of styrofoam) so that it can set. Repeat this will all the cake pops and let them all dry.
Deadpool face decorations
- Take a small piece of black fondant and roll it out thinly (use cornstarch if it sticks to the surface). Choose a round cutter to cut out rounds - the cutter should be slightly smaller than the diameter or the height of your cake pops. Cut out a circle or two. When you're working on fondant, make sure you cover the fondant pieces that you're not using to prevent them from drying out.
- Cut out a thin strip from the middle of the black circle. Next, cut out two small segments from each of the half circles (as seen in the gif, they stick to the cake pop better this way).
- Take a small piece of white fondant and roll it into a small ball. Then flatten it into a circle and cut it in half - these are the eyes.
- Use water to stick these onto the black fondant pieces (as in the gif). Press it down gently.
- Apply a little water to the back of the black fondant piece and stick it on the front of the cake pops.
- Gently press it down along the edges to make sure it sticks well to the cake pops. Let it dry completely.
- To remove any cornstarch from the black fondant, use a small paint brush and brush the fondant pieces with vodka (this is optional). Let them dry.

Made famous by Bakerella, cake pops, in her own words are “crumbled cake mixed with frosting and rolled into bite-sized balls and then dipped in melted candy and served lollipop-style on a stick”. While I find them truly adorable, I’m also quite picky. You need to balance the sweetness because the frosting can make it fairly sweet.
So you have to use just the right amount of frosting to bind the crumbled cake together and not make it stodgy, wet and overly sweet. It should still look like cake and not a gooey truffle like thing. That’s exactly how I like my cake pops to be, and EXACTLY what these Deadpool cake pops are! 🙂
Plus these Deadpool cake pops also have Funfetti! You could absolutely make or use a Funfetti cake, but personally, I love the unbaked funfetti bits in the cake more. OR you could do both of course. They are pretty and yummy, much like the guy playing the character in the new movie, so why not? I almost felt too bad to bite into these cake pops because they looked so awesome. But only almost.
